East Indian Cooking Course with Kiku
The courses will take place at Nadu Creek Loft in the New Year. You will cook 3-4 Indian dishes and will finish the day by eating the meal with other participants. The course will cover the following topics:
- An overview of of regional differences in Indian cooking.
- A feel, taste and smell session of the variety of spices used in Indian cooking. You will also learn how to buy, grind and store them properly.
- Learning techniques for making wet masala, a typical base used in most Indian dishes made from onions, garlic, ginger and spices.
- Cooking 3-4 dishes, each using the wet masala base to make a meal for dinner.
Note: You can design your own course by getting together with 8-10 people and developing your own menu. For example, we could do a vegetarian cooking course or gluten free cooking course.

Freshly ground spices used in the course are availale from Kiku or at the following local shops: Green Gaia in Masset, Haida Gwaii Museum Gift Shop in Skidegate, Crow’s nest in Tlell and Bayview Market in Port Clements.

We can take guests out to gather wild mushrooms and combine these with locally caught salmon and wild berries for a delicious Haida Gwaii meal.
